La gastronomia del Senegal té com a base en molts dels seus plats el pollastre o el peix juntament amb productes locals i cultivats al país. Com que és un país majoritàriament musulmà no trobem carn de porc.
Un dels plats principals de la gastronomia senegalesa és el "Thiébou Dieune". Un plat consistent en peix, arròs, salsa de tomàquet i una selecció de verdures i hortalisses.
Pollastre Yassa: yassa és una salsa amb molta ceba i també amb mostassa, pebrot verd i espècies. Solen servir-lo amb pollastre encara que també pot acompanyar altres aliments.
Maffe: és una salsa de cacauets (molt abundants al Senegal) se sol servir amb arròs i carn.
Fataya: són pastissets de carn o peix que van acompanyades de ceba, salsa de tomàquet i salsa picant opcional.
Els anacards i cacauets torrats (o crus) són molt habituals en tot el país, són grans productors i els preus són molt bons.
